Toffee & White Chip Cookies
Today was a snow day for my kids, I opted not to brave the mountain to take them skiing but instead invited friends over to play. I had 7 kids running around my tiny home, tracking snow all over the place, being loud and rambunctious. It is my favorite. So while they were occupied, I found some leftover toffee I had made a little bit ago and thought I would concoct a recipe using them. Here's the delicious end result. I hope you enjoy it and love it as much as my super-biased reviewers did (kid reviews hold no weight? they love ALL treats).
Toffee & White Chip Cookies
Ingredients:
3/4 cup brown sugar
1/2 cup unsalted butter
1 egg
1 /2 teaspoon vanilla bean paste (or 1 teaspoon vanilla)
1/2 teaspoon almond extract
1 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups all purpose flour
1/2 cup mini cinnamon chips
1 cup white chocolate chips
1 cup toffee bits
Directions:
1. Preheat oven to 350
2. Cream the brown sugar and butter until light and fluffy.
3. Beat in egg, vanilla, and almond extract.
4. Add in the flour, baking powder, salt, mixing until just combined.
5. Stir in the chips and toffee bits.
6. Scoop dough onto cookie sheet. Bake for 12-15 minutes until done. Let rest on cookie sheet 5 minutes before placing them on a cooling rack.
